Chinese does have a word for the umami taste - 鲜. In fact the word is part of chinese 'seafood' 海鲜, where 海 is sea. Will be interesting to check whether French has a word for that umami taste. After being married 13 tears, Rob is now hooked on the umami taste. I guess that's a delicacy I would never have tried otherwise.<br /><br />I've never heard of "umami". Never tried any of the reproductive organs, don't think I will ever try.<br />Sea urchin is my favourite food! Alas it is very expensive. What we are eating is actually the role of sea urchin. It is full of the taste umami, a category of taste in food besides sweet, sour, salt, and bitter.<br />If you think sea urchin is tasteless, I guess your umami taste sense is not developed.
